A Taste of Tradition and Innovation: Mercure Mactan Cebu Brings Culinary Excellence to Cebu Food & Wine Festival 2026

As June unfolds in Cebu, food enthusiasts are once again gathering around tables filled with stories, flavors and creativity. At the heart of this year’s Cebu Food & Wine Festival 2026 is Mercure Mactan Cebu, a hotel that is turning dining into an experience that goes beyond the plate.

For guests stepping into the hotel’s Historias de Cocina Weekend Dinner Buffet, the aroma of expertly carved Australian beef and lamb immediately sets the tone. Every Friday and Saturday throughout JUNE, diners can indulge in premium selections sourced from Meat & Livestock Australia and Aussie Beef & Lamb Philippines. The Php 1,499 buffet comes with unlimited draft beer, a glass of sparkling wine and even a nostalgic stop at the ice cream corner. This is available from 6PM to 10PM

But the celebration extends far beyond the buffet line.

Executive Chef Pao Aviso and Sous Chef Raven Aranda joined some of Cebu’s most respected culinary figures at the festival’s Grand Tasting Ceremony. There, the pair showcased dishes that reflect both innovation and local identity: Lamb Brasato Ossobuco Paella and Lamb Cansi Quesabirria.

Food tells a story. You can taste the international influences, but Cebu is still at the center of every bite.

That balance between heritage and modern technique has become a defining characteristic of Mercure Mactan Cebu’s culinary philosophy. By transforming familiar flavors into memorable dining experiences, the hotel continues to contribute to Cebu’s growing reputation as one of the country’s premier gastronomic destinations.

As festival-goers raise a glass and savor another carefully crafted dish, one thing becomes clear: great food is more than nourishment—it is a bridge between cultures, generations and communities. And in Cebu, every memorable meal adds another chapter to a story that is still being written.
