There is something about a Filipino feast that makes strangers feel like family. The moment the aroma of roasted meats, simmering stews, and freshly grilled delicacies fills the air, stories begin to flow as freely as laughter.
This Independence Day, Tambuli Seaside Resort and Spa invited guests to celebrate through "Flavors of Identity: The Ark of Taste," a culinary experience that went beyond the buffet table. Running until June 30, from 11 a.m. to 2 p.m., the event showcased a thoughtfully curated spread inspired by the rich flavors, ingredients, and traditions that define local heritage.
More than a dining experience, Flavors of Identity: The
Ark of Taste is a celebration of the country's culinary roots. The unique
showcase highlights heritage ingredients and local flavors that have shaped the
nation's food culture, while championing the people and traditions that keep
these stories alive.
Leading the culinary journey are some of Cebu's most
passionate advocates of Filipino cuisine: Chef Lalay Lava of Abaseria, Slow
Food advocate Chef Sweetie Cañedo, and Tambuli Seaside Resort and Spa
Executive Chef Gino Abing. Through their thoughtfully prepared dishes,
guests are treated to recipes that honor both time-honored traditions and the
communities that have preserved them.
At the heart of the buffet are some of Cebu's most beloved culinary treasures. Guests eagerly line up for the famous Cebu Lechon, celebrated for its crisp golden skin and succulent meat, alongside cherished native delicacies such as Bodbod and Palitaw, whose familiar flavors evoke childhood memories of fiestas and family gatherings.
The festivities come alive with the vibrant performance of
the traditional Tinikling, the country's iconic folk dance. As dancers
gracefully weave between clapping bamboo poles, guests are reminded that
culture is best experienced, not simply observed.
Food is a way of remembering. Nearby, friends swapped stories of family fiestas, while first-time visitors discovered that every regional delicacy carries a tale of resilience, ingenuity, and community.
Beyond the feast, the event carries a deeper purpose: to
celebrate Filipino food heritage, support local producers, and promote
sustainable food traditions through the Slow Food movement. It is a
reminder that the future of Filipino cuisine depends not only on talented chefs
but also on the farmers, fisherfolk, artisans, and communities who safeguard
the country's culinary treasures.
Guests could enjoy the lunch buffet for Php 1,800 per person or opt for the Php 2,500 day-use package, transforming lunch into a seaside holiday shared with family and friends.
At its heart, Flavors of Identity: The Ark of Taste
is a tribute to the recipes, traditions, and cultural expressions that have
endured through generations. The Tinikling dance, the savory Cebu Lechon, the
nostalgic sweetness of Bodbod and Palitaw, and the passion of the chefs behind
the menu share a common purpose: preserving the stories of a people whose
identity has always been rooted in community. In a world that moves ever
faster, perhaps the greatest act of independence is to gather around the table,
celebrate our heritage, and ensure that the flavors of our identity are never
forgotten.
